These homemade fruit gummies are made with real juice and hidden vegetables. The base uses orange juice and carrot juice, but the carrot flavor is barely noticeable, making them perfect for kids. This healthy gummy recipe is easy to make, sets reliably, and can be customized with other fruit and vegetable juice combinations.

¼cupcarrot juice
2tablespoonshoney
3tablespoonsgelatin powder
½teaspoonlemon juiceoptional, brightens flavor

Warm the bowl over low heat or in a saucepan, stirring gently until gelatin dissolves.
Do not boil or overheat.
Work quickly and pour mixture into silicone molds or a parchment-lined dish.
Move efficiently, as the mixture can begin to set as it cools.

Keep in an airtight container in the refrigerator for up to one week.
Notes
Optional Variations:
Beet and strawberry juice
Celery and pineapple juice
Spinach and kiwi juice
(Use the same total juice amount and gelatin/sweetener ratios.)If your kids are hesitant about vegetables, reduce carrot juice and replace with more orange juice or add an extra tablespoon of honey.Juice can be fresh, store-bought, or blended and strained if you don’t have a juicer. For firmer gummies, you can slightly increase the gelatin by ½ tablespoon.Be careful with fresh pineapple or kiwi juice; these can prevent setting unless cooked or strained.
