Prepare the Onion: Peel the onion and slice it thinly to create several layers, which will help the honey extract the beneficial compounds.
Layer the Ingredients: In a clean glass jar, begin by placing a few onion slices at the bottom, followed by a generous drizzle of honey. Continue layering onion slices and honey until you’ve used all the onion.
Infuse in a Warm Spot: Place the jar in a warm spot for 2-4 hours to allow the onion to release its juices. For faster results, place the jar in your oven with the oven turned off but the light on. The warmth from the light will speed up the infusion process.
Strain the Syrup: After the syrup has infused, strain out the onion slices using a fine mesh sieve or cheesecloth. Pour the liquid into a clean jar.
Storage: Store the syrup in the refrigerator, where it will keep for about a week.
