Feed your starter 4–8 hours before baking. You want it active, bubbly, and able to pass the float test (a small spoonful floats in water).
Add the ingredients to your bread machine in this order:
Active starter
Water
Honey or sugar
Flour
Melted coconut oil (not too hot!)
Salt (sprinkled on top)
Select the Natural Sourdough program on your bread machine. Set the loaf size to 2.0 lb (1000 g) and choose the dark crust color.
Press Start.
Notes
Do NOT open the lid at any time during the cooking process, your loaf will fall!
Let the loaf cool completely before taking the loaf out of the pan. I let mine sit in the machine for at least an hour or 2 before taking it out. This ensures it continues to cook all the way through.
Your machine might beep and move around, this is normal for this recipe. Just make sure it is not close to the edge of the counter so it won't fall off and ignore it.
If your bread machine does not have a sourdough setting, try this method:
Run the Dough cycle to mix and knead the dough (usually about 1.5 hours).
Leave the dough in the machine with the lid closed for an additional 2–3 hours, allowing it to ferment and rise until nearly doubled in size.
Run the Bake-Only cycle to bake the loaf. Alternatively, remove the dough and bake it in your oven at 375°F for 40–50 minutes.
