3cupsrolled oats
1.5cupspecans
1tspcinnamon
¼tspnutmeg
¼tspsalt
⅓cupmaple syrup
¼cupmelted tallow or coconut oil
2tbspmolasses
1tspvanilla extract
Instructions
Preheat your oven to 325°F and line a large baking sheet with parchment paper or a silicone mat to prevent sticking.
In a large mixing bowl, combine the oats, pecans, cinnamon, nutmeg, and salt. Stir until evenly mixed.
In a small saucepan or microwave-safe bowl, melt the tallow (or heat coconut oil). Whisk in the maple syrup, molasses, and vanilla extract until smooth. Pour this mixture over the oat-nut mixture and stir until every piece is coated.
Spread the granola evenly on the prepared baking sheet. Bake for 25–30 minutes, checking halfway through and rotating the pan for even browning. Stir gently every 10 minutes to avoid burning.
Once golden and fragrant, remove the granola from the oven and let it cool completely before storing or serving.
